Sweet vegan Bowl

Sweet vegetable bowl 


1 1/2 tbsp olive oil 

1/2 baby avocado 

1 baby sweet potato, sliced 

1 large carrot, sliced 

1/4 cup shredded romaine lettuce 

1/4 cup cauliflower florets

1/4 tsp mixed herbs or oregano 

1/8 tsp salt 

1/8 tsp pepper

1 tbsp coriander, chopped 

1 tbsp parsley, chopped 

1 tbsp lemon juice 


For grilled avocado: 

Cut avocado in half and remove seed. Drizzle with lemon juice and brush lightly with olive oil. Gently place cut side down on grill over hot coals for 2-3 minutes. Season with salt to taste.

For baked veg: sweet potato, cauliflower, and carrots 

Drizzle the sweet potato, carrots and cauliflower  evenly with 1 tbsp olive oil. Season the vegetables with salt, pepper and mixed herbs 

Roast the vegetables for 20 minutes until tender. 

Arrange the roasted vegetables, lettuce and avocado into a bowl drizzle some lemon juice on top, sprinkle on the fresh parsley, coriander  and serve.
