Mountain Muffulettas

Ingredients:

5 Whole grain mini baguettes
5 Leaves purple lettuce
¼ Cup green olives, sliced
5 Mushrooms, sliced
½ Cup green olive paste
1 red onion, sliced
5 radishes, sliced

Instructions:

1. Cut each baguette lengthwise. Use your hands to hollow out the top and bottom of each loaf.

2. Place the bread on a pan, cut side down, and broil for approximately 3-5 minutes.

3. Brush each half liberally with green olive paste.

4. Start by layering purple lettuce on the bottom of each loaf. Then continue with onion slices, radishes, mushrooms and green olives.
