Smoked Mushroom Philly Cheesesteak Sandwich
One of the most iconic sandwiches gets a twist in this delicious vegan recipe! Made with marinated mushrooms, crusty bread, and vegan cheese, this sandwich is super special and oh-so delicious!
This sandwich is perfect as a quick lunch or a lazy Sunday dinner; moreover, if you want an easy appetizer, you can cut the sandwich in thirds and serve.

Ingredients
9 ounces mushrooms, sliced
1/2 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
2 tablespoons soy sauce
2 tablespoon BBQ sauce
1 teaspoon brown mustard
1 medium yellow onion, thinly sliced
2 clove garlic, minced
4 ounces vegan cheddar cheese
2 sandwich rolls
Directions
Place the mushrooms, spices, soy sauce, BBQ sauce, and brown mustard in a glass or ceramic bowl. Let it marinate for at least 30 minutes.
To make the caramelized onions: Preheat a nonstick skillet over medium-high heat; once hot, sauté the sliced onions for 10 minutes, until lightly browned, adding a small amount of soy sauce or water. They’re ready when golden brown.
In the same skillet, fry the mushrooms with garlic until they are tender and fragrant. Add a splash of the reserved marinade occasionally and stir periodically to ensure even cooking.
Top the mushrooms with cheese; cover your skillet with a lid to melt.
Toast the sandwich rolls and cut lengthwise. Divide the mushroom mixture between sandwich rolls and enjoy!
