Brian’s Cheezy Recipe

When my friends and family who haven’t seen me in a while or even those who have followed along the journey seeing me having lost close to 140 pounds now and reversing 6 life threatening diseases they can’t believe it.

But seeing really is believing!

The natural first question is…How’d you do it?

When I explain that I went Plant-Based….typically the response is exactly what my first response was when I started this and about something they could never give up like cheese, meat, sugar, cookies, fast food….that is normal and it is our natural survival instinct kicking in!!

Truth is, I really didn’t give up anything I used to eat, I just found ways to make it as healthy as possible and one of the big ones for me and my family was cheese.

When I or my family get a craving for cheese, here is a simple recipe I have mastered that everyone loves and it is great for mac N Cheese, dips, nachos, burritos, over vegetables such as broccoli, etc.

This is a base recipe and all kind of seasonings, peppers, etc. can be added to it!

Brian’s Cheezy Recipe

Ingredients

2 medium sized potatoes, skinned
1 carrot
½ medium sized white onion
½ cup of cashews
2 tablespoons nutritional yeast
¼ cup of unsweetened nut milk
½ tablespoon vegan mayo*
½ tablespoon vegan butter*
1 teaspoon garlic powder
1 teaspoon chili powder
salt and pepper to taste
*optional

Instructions:

To prepare the cashews, soak them in water for at least a half hour. Chop the vegetables and combine in a pot. Bring to a boil and cook until soft; usually about 10 minutes. Combine spices, vegetables, optional fats, nutritional yeast and cashews in a blender. Blend until smooth and creamy.
