Basecamp Summer Soup

Basecamp Summer Soup (Served Cold)


½ Cup raw walnuts
1 ½ Cup cold water
2 Tbsp lemon juice
2-3 cloves garlic
1 Cucumber
½ Cup dill, chopped
salt to taste


1. In a food processor, add walnuts, water, lemon juice, garlic and salt. Process until smooth. Transfer into a bowl.

2. Cut the cucumber into cubes or shred it.

3. In the bowl with the walnut mixture, add the cucumber and dill and stir well.

4. Serve soup cold.
